January is always the month of New Beginnings. Gym memberships go on sale, athletic clothes fly off the shelves at the big retailers, and we bring out some of the new exercise equipment that Santa left for us at Christmas. Every year I do these things too and I set myself up for failure. I am just not committed to being a “gymaholic” even though I really want to be. Instead, I am more of a “workaholic” which often disrupts my new beginnings and gets me off track.

This month, I decided to make a new change that was more attainable. I am placing my focus on intentional meal planning. I want to spend less time on social media watching Reels and TikToks and more time putting in an effort to make my daily tasks a bit more smooth.
In general, I am pretty organized. I will make a good meal plan, gather all the groceries, and I will have the best of intentions but quickly I fall “off the wagon” as life happens and the stresses of my work days arise. Sometimes I feel “too tired” to brown some ground beef and will opt for cereal for dinner or ordering some sort of take out. Getting off track is a viscous cycle because that is often followed by feelings of guilt.
The biggest change I am making for the upcoming year is prepping freezer meals! I am planning to prep ahead so that on those tough work days, I already have a homecooked meal prepared.
If you are looking for budget friendly, easy dinner ideas, I encourage you to search for “Crockpot Freezer Meals”. On the days that I think I’m too tired to brown meat, I am going to drop a crockpot freezer meal into my Instapot. I truly love the idea of National Sunday Supper Month. Our lives have become so busy and so technology driven that even the smallest events like a family dinner can seem like a lost art. I am challenging myself for the month of January to have restaurant-free, technology free family dinners on Sundays. Follow me on Instagram or Facebook to see which meals I come up with in January.
Time is precious. Spend time and share a meal with those that you love!
